Follow along with these step-by-step instructions for making a whimsical 3-D popsicle cake
This 3-D cake is made from a simple sheet cake. Depending on how many servings you would like, you can adapt the design and instructions to fit any sized cake. For carving cakes, be sure to select a cake recipe that is stable and not too crumbly or messy. For example, a vanilla pound cake or chocolate mud cake would be preferable over say, a carrot cake with nuts and raisins.
Materials:
- Sheet cake
- Buttercream
- Serrate knife or sharp paring knife
- Round cutters (optional)
- Small off-set spatula
- Large off-set spatula
- Paper or cardboard template
- Fondant
- Gel food coloring
- Cornstarch
- Rolling pin
- Fondant smoother
- Clean paintbrush
- Water or gum glue
Step 1:
Create a template for your popsicle and popsicle stick. Fold paper in half to make sure the shapes are symmetrical.
Step 2:
Following the popsicle template, cut your sheet cake into the popsicle shape. Use round cutters to help create the bite marks.
Step 3:
Frost the cake with a thin layer of buttercream.
Step 4:
Tint fondant orange, or color of your choice. Dust your work surface with a touch of cornstarch and roll out the fondant into a rectangular shape to about 1/4 – 1/8″ thick.
Step 5:
Carefully roll fondant back over the rolling pin, lift and unroll fondant over cake. Gently adhere fondant to the cake. Press and smooth over the top and sides of the cake with a fondant smoother.
Step 6:
Make sure the fondant is pressed into all of the nooks of the cake. Trim with a sharp paring knife.
Step 7:
Roll out white fondant the same width and length of the popsicle, about 1/4 – 1/8″ thick. Use a paring knife to cut a “dripping” pattern.
Step 8:
Moistened the top portion of the popsicle cake with a tiny bit of water or gum glue. Transfer the white fondant to the top of the popsicle cake. Smooth over the edges and trim.
Step 9:
Carefully cut through the white fondant where the bite is. That way, the inside of the bite will be orange!
Step 10:
Using a large off-set spatula, carefully transfer covered cake to a cake board.
Step 11:
Roll and cut a thin strip of white fondant. Place along the bottom edge of the bite.
Step 12:
Color small amours of fondant various colors. Roll them into thin ropes and cut into 1/2″ pieces to create “sprinkles.”
Step 13:
Adhere “sprinkles” to the cake with a tiny bit of water or gum glue.
Step 14:
Roll out a piece of “wood” colored fondant to about 1/2″ thick. Use the popsicle stick template to cut out the fondant. Adhere to the cake board at the center of the base of the popsicle.
